Farro, Lime, Pineapple, and Yogurt Parfait

Ingredients

  • 1/2 cup farro dry
  • 3/4 cup water
  • 1/8 tsp kosher salt
  • 1/4 tsp vanilla extract
  • 2 tsp fresh lime juice
  • 3/4 tsp fresh lime zest
  • 3 Tbsp 2% milk
  • 1/8 tsp ground nutmeg
  • 3/4 cup plain Greek yogurt fat free
  • 3/4 cup fresh pineapple diced
  • 2 tsp fresh lime zest

Instructions

  • Combine farro, water and salt, and steam for 25 minutes. Set aside and chill.
  • Combine chilled farro with vanilla extract, lime juice and zest, milk, and nutmeg.
    Layer cooked farro, yogurt, pineapple, and second listed lime zest.
