Tomato Herb Vinaigrette

Ingredients

  • 4 oz. tomatoes diced
  • 1/4 cup red wine vinegar
  • 1/2 tsp. Dijon mustard
  • 1 Tbsp tomato paste
  • 1/8 tsp. crushed red chili pepper flakes
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper
  • 2 oz. olive oil
  • 1 Tbsp fresh basil chopped

Instructions

  • In a blender, combine tomatoes, red wine vinegar, Dijon mustard, tomato paste, chili flakes, salt and pepper.
    While blender is running, drizzle in olive oil until emulsified.
    Stir in basil.
