Signature Avocado Toast with Egg on Multigrain

Ingredients

  • 2 each avocado
  • ¾ tsp fresh lime juice
  • ¼ tsp kosher salt
  • 1/8 tsp ground black pepper
  • 4 each hard boiled egg
  • 4 slices whole grain bread
  • 2 Tbsp. microgreens
  • ¼ tsp extra virgin olive oil

Pickled Red Onions

  • 2 tsp granulated sugar
  • ½ tsp pickling spice
  • ½ tsp kosher salt
  • 2 Tbsp red wine vinegar
  • 1 Tbsp red onions sliced

Instructions

  • Prepare pickled red onions according to recipe.
  • Mash avocado and toss well with lime juice and season with salt and pepper.
  • Slice hard boiled eggs.

Pickled Red Onions

  • Place vinegar, sugar, pickling spice, and salt in a saucepan.
  • Bring to a boil, then reduce to a simmer until the sugar dissolves.
  • Place red onions in a container and pour hot liquid over top.
  • Cover and refrigerate for 3 hours.

Assembly:

  • Lightly toast bread slices.
  • Spread mashed avocado evenly across toast.
  • Garnish each with 1 Tbsp. pickled onions.
  • Toss micro green lightly with olive oil and season with salt and pepper.
  • Top toast with micro greens.
  • Top with sliced egg across the length of the toast.
