Cilantro Rice with Fresh Cooked Eggs and Creamy Avocado

Ingredients

  • 2/3 cup brown rice dry
  • 2 tsp fresh lime juice
  • 1/4 cup fresh cilantro chopped
  • 8 each egg
  • 1 cup canned black beans drained and rinsed.
  • 1/4 cup avocado cubed
  • 1/4 cup salsa
  • 1/8 tsp kosher salt

Instructions

  • Cook rice according to package. Fluff rice and stir in lime juice and half of the cilantro.
  • Poach or fry eggs, whichever you prefer.
  • Place rice and beans into a bowl, top with one egg each, avocado, salsa, salt, and remaining cilantro.
