Fennel Mint Tzatziki

A delicious yogurt dip with fennel, cucumber, garlic, mint, and lemon juice.

Ingredients

  • 3/4 cup fresh fennel
  • 1 Tbsp fennel fronds
  • 1 each fresh garlic peeled and crushed
  • 1/4 cup cucumber peeled, seeded, diced
  • 2 Tbsp fresh mint
  • 1 1/2 cup plain Greek yogurt
  • 1 Tbsp fresh lemon juice
  • 1 1/2 tsp red wine vinegar
  • 1/2 tsp salt

Instructions

  • In a food processor, pulse the fennel, fronds and garlic until finely chopped. Add the cucumber, mint, yogurt, lemon juice, vinegar and salt. Puree until the cucumber is finely chopped and well combined and serve with crudité of choice.
